Pat..I'm no expert but ...

Howdy Pat!! I like a tart apple for baking but for muffins I choose an in between one such as a Spartan or Fuji. Granny Smith is a great apple to use...but it is tart. It has been my experience that red delicious and golden delicious do not hold up well in recipes..I think they have a higher water content and have less "body" to them...Maybe Sarah Phillips could be of more help over "In the Kitchen." Good Luck!!
