Recipe: Oak Creek High School Peanut Butter Bars with Chocolate Frosting

Oak Creek High School, WI
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup peanut butter
1/2 cup butter, softened
1 cup brown sugar, packed
1 tsp vanilla
Ella's Chocolate Frosting (recipe follows)
Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.
Sift flour, baking powder and salt together; set aside.
Cream peanut butter and butter together for three minutes. Add brown sugar and vanilla; cream until fluffy. Add dry ingredients. Pat into prepared pan.
Bake for no more than 15 minutes - if they overbake they will become crumbly.
Cool completely in the pan on a rack before frosting.
ELLA'S CHOCOLATE FROSTING
1/4 cup butter, softened
2 1/4 cups powdered sugar, divided use
1/4 cup hot milk
1/4 cup unsweetened cocoa powder
2 teaspoons strong hot coffee
1/2 teaspoons vanilla extract
Cream butter with 1 cup powdered sugar, then add remaining powdered sugar alternately with the remaining ingredients. Spread over bars when cooled.
