Pickled Cabbage and Peppers

Hi Shannon. My husband and I make a very old-style recipe for stuffed banana peppers, or use the ripened larger red pimiento peppers. We make up a sweet-sour brine and put the finely shredded cabbage into the cleaned (scooped out) peppers. These, in turn are then put into a quart jar, and another prepared brine is poured over all. These are great, served cold. Some have referred to these as a 'sauerkraut' stuffed pepper; but you use fresh cabbage.

I have not posted it, as yet, because it is a two-day, and two-step process. Once they are in the jars, however, processing them is quite simple.
