Recipe: Almond Fruit Salad (using rice with ginger and orange dressing)

ALMOND FRUIT SALAD

FOR THE SALAD:
2 cups cooked white or brown rice, cooled to room temperature
1 orange, peeled and quartered
1/2 cup seedless red grapes*
1 medium kiwi fruit, pared and quartered
1/3 cup slivered almonds, toasted
FOR THE DRESSING:
2 tablespoons orange juice
1 tablespoon soy sauce
2 teaspoons vegetable oil
1/4 teaspoon fresh minced ginger

Toss the salad ingredients together and set aside.

Mix the dressing ingredients together. Pour this mixture over the rice mixture. Toss and serve.

*Slice grapes in half if serving to children.

Servings: 6
