AUNT BETTY'S KEY LIME CAKE
FOR THE CAKE:
1 package Duncan Hines lemon supreme cake mix
1/2 cup water
1/2 cup Key lime juice or lime juice
Zest of 3 Key limes or 1 regular lime (plus extra for garnish)
1 (3 ounce) package lime Jell-O
1/2 cup vegetable oil
4 eggs, slightly beaten
FOR THE FROSTING:
1/4 pound (1/2 cup) butter or margarine, softened
1 (8 ounce) package of cream cheese, softened
1 teaspoon vanilla extract
1 (1 pound) box confectioners' sugar
1 to 2 tablespoons milk
TO MAKE THE CAKE:
Preheat oven to 350 degrees F. Grease a 13x9x2-inch baking pan.
Using an electric mixer, blend ingredients together until well combined, about 3 minutes. Pour into the prepared baking pan.
Bake for 45 minutes or until a toothpick inserted comes out dry.
TO MAKE THE FROSTING:
Use an electric mixer to combine butter, cream cheese, vanilla, confectioners' sugar and milk. Blend until smooth and creamy, then add milk to reach the desired consistency.
Spread frosting over cake and grate lime over frosting.
