Poppa D's Southern Chicken and Dumplings (quantity recipe)

POPPA D'S SOUTHERN CHICKEN AND DUMPLINGS

10 lbs chicken legs and thighs
6 to 8 cups flour
6 eggs
8 cans chicken broth
salt and pepper
yellow food color

Cook chicken until tender, debone chicken. Add 6 can of chicken broth to the remaining broth.

In large bowl mix flour and slightly beaten eggs and 2 cups of chicken broth out of cooked chicken. Add salt and pepper to taste. Add more flour if necessary, knead until a little on stiff side.

Add just enough food color to color broth.

Take part of the dough at a time and roll out real thin and cut into strips approximately 1-inch wide and 4-inches long.

Bring broth to a boil and drop dumplings into broth and cook until tender approximately 20 minutes. Do not stir, just shove down the dumplings from the top to the bottom. When done add chicken.

Makes approximately 30 servings
