Recipe: Peanut Butter Cheesecake from Hershey'sChocolate Cookbook for Di Groome, England

PEANUT BUTTER CHEESECAKE
Serves 10-12
Peanut Butter Chocolate Crust (recipe below)
1 (8 oz.) package cream cheese, softened
2 tablespoons lemon juice
1 1/2 cups Reese's Peanut Butter Chips
1 1/3 cups (14-ounce can) sweetened condensed milk (not evaporated milk)
1 cup heavy or whipping cream
Sliced fruit
Prepare Peanut Butter Chocolate Crust; set aside. Beat cream cheese with lemon juice in large mixer bowl until light and fluffy. Combine peanut butter chips and sweetened condensed milk in medium saucepan. Cook over low heat, stirring constantly, until chips are melted and mixture is smooth. Add warm mixture to cream cheese mixture.
Whip cream until stiff; fold in peanut butter mixture. Pour onto prepared crust; chill several hours or overnight. Garnish with sliced fruit before serving.

1/4 cup Hershey's cocoa
1/4 cup confectioner's sugar
1/4 cup butter or margarine, melted
1/2 cup Reese's Peanut Butter Chips, chopped (Do not chop penaut butter chips in blender.)
Combine wafer crumbs, cocoa, confectioner's sugar and melted butter. Stir in chopped peanut butter chips. Press onto bottom of 9-inch springform pan.
