Pumpkin Chip Muffins

Hi, im new to your group but it looks like lots of fun. Im a farm wife and mother of 4 with the last one just now graduating from highschool. I still have 2 in college and 1 is a teacher of 1st graders. My boys like this receipe especially well and I sometimes add a light cream cheese topping.

PUMPKIN CHIP MUFFINS

4 eggs, beaten
2 cups sugar
1 (16 oz) can pumpkin puree (unsweetened)
1 1/2 cups vegetable oil
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 cups chocolate chips

Mix eggs, sugar, pumpkin and oil together until smooth.

Combine dry ingredients and add to mixture; mix well.

Fold in chips. Fill muffin cups 3/4 full.

Bake at 400 degrees F for approximately 16 minutes. Cool in pan 10 mins. Remove to rack.

Makes about 24 standard size muffins
