Recipe: Banana Gems with Thin Icing (muffins using biscuit mix)

BANANA GEMS WITH THIN ICING

2 cups baking mix (Bisquick)
1 1/4 cups mashed ripe bananas
1/3 cup sugar
1 egg, slightly beaten
3 tbsp vegetable oil
FOR THE THIN ICING:
1/2 cup powdered sugar
2 to 3 teaspoons water

Heat oven to 400 degrees F. Line with paper baking cups or grease bottoms only of 48 small muffin cups (1 3/4 by 1-inch) or 12 medium muffin cups (2 1/2 by 1 1/4-inches).

Stir together the baking mix, bananas, sugar, egg, and oil. Mix only until just moistened. Divide batter evenly among prepared muffin cups.

Bake the small muffins 10 to 12 minutes, medium muffins 15 to 20 minutes, or until golden brown. Remove from pan immediately.

Frost with Thin Icing. Serve warm.

TO MAKE THE THIN ICING:
Mix the powdered sugar and water until smooth and spreadable.
