re: Canning hot fudge
Misc.I wondered why I never found a home canning recipe for hot fudge, so I asked my MSU Extension Home Ec specialist. She said you can't can hot fudge at home. It's too thick to get hot enough in the home canning process. Because of the milk/cream/chocolate, it's too high a risk to can at home.
So, I make my fabulous hot fudge, refrigerate it, and give it to people at the last moment with a label that says it must be refrigerated immediately. I use the white plastic lids, so it doesn't even look like the other jars. So far, so good.
