Hello Everyone!
It's so much fun sharing recipes, then trying them out and enjoying a delicious meal. Such is the case with my cousin Carol's "Mighty Meatloaf". Her version is made with ground sirloin and it gives it a dinstinctive meat flavor. The onion and garlic is food processed so that even the finickiest eater won't notice them, yet it is packed with flavor. This meatloaf is a hefty one and not filled with fillers...it also makes for a great sandwich!
I served this with mashed potatoes, green peas, and applesauce. What a delightful meal!
My cousin has been sharing many Cuban recipes and a yumy one is her Quickie Fabada. Fabada is short for Fabada Asturiana, a famous soup/stew from Asturias, Spain, the Motherland. Her version is quick and delicious as well as satisfying for a cold day. I will post that next...
MIGHTY MEATLOAF
1 pkg. ground sirloin
1 pkg. ground pork
1 med. onion
2 cloves garlic
1/2 bunch cilantro or Italian flat leaf parsley
2 eggs
3 slices whole wheat bread
1/4 cup seasoned breadcrumbs
1/4 cup ketchup
2 Tbsp. Montreal Steak Seasoning
2 Tbsp. Worstershire Sauce
TOPPINGS (TWO DIFFERENT):
TOPPING 1:
1/4 cup Ketchup
1/4 cup Chili Sauce (or I've used Oriental sweet & spicy dipping sauce - awesome)
1/4 tsp. mustard
OR TOPPING 2:
1/4 cup Chili Sauce
1/4 cup grape jam
Preheat oven to 350 degrees
In food processor, chop onion, garlic and cilantro/parsley fine. Add eggs, mix well. Pour this over the meat.
In the food processor, crumble your bread until fine. Add to the meatloaf along with the breadcrumbs.
Add ketchup, steak seasoning and Worstershire sauce. Combine all well WITH A FORK ~ DO NOT USE YOUR HANDS (this makes for very tough meatloaf).
Place meatloaf onto an oven roasting pan and form into an oblong loaf. Add selected topping.
Bake at 350 degrees F for 1 hour and 15 minutes.
ENJOY!
