re: Crack in Cheesecakes

The crack is supposed to be there. My parents had a catering business and restaurant for several years. When the cheesecake cracks thats how you know it is cooked properly. I think that the layer of sour cream covers the crack. The cherry pie filling will work just the same. If it is going to be served and the crack really bothers you, pre-slice and plate the servings.
