re: Essentials of Italian Classic Cooking

Hi: Such a great book you got. Although Italian cooking is popular, there are few books. Apart from Essentials of Italian Classic Cooking by Marcella Hazan, I always come across good recipes but hardly find Italian cookbooks. Looks like Italian Cuisine by Tony May is also good, I just found it by reading your posting.

I read about his 9 step preparation for the Tortelli di Carnevale (Puffed Tortelli) and it sounds great.
