Recipe: Molded Cabbage Slaw (1977)

Salads - Fruit, Gelatin
MOLDED CABBAGE SLAW

1 (3 oz.) pkg. lemon, lime or orange-flavored gelatin
1/8 teaspoon salt
1 cup boiling water
3/4 cup cold water
2 tablespoons vinegar (or lemon juice)
2 cups (1/2 small head) shredded cabbage
1/2 cup (1 stalk) sliced celery
FOR SERVING (OPTIONAL):
lettuce leaves
salad dressing or mayonnaise

In medium mixing bowl dissolve gelatin and salt in boiling water. Add cold water and vinegar; mix well. Chill until thickened but not set, about 30 minutes.

Fold in remaining ingredients. Pour into oiled 1-quart mold or 8-inch square pan. Chill until firm, 1 1/2 to 2 hours.

Serve on lettuce leaves with salad dressing or mayonnaise, if desired.

Makes 4 to 6 Servings
