Nancy, I have found that my kid's favorite party appetizer is twice baked potatoes. Use small russetts. I bake the potatoes a usual, then as soon as they come out of the oven, take a fork and "half" the long way by poking around the potatoe. Flake most of the potatoe into a large bowl, leaving a 1//4 inch shell. Return to oven to crisp up. To the bowl, add one carton of sour cream, one cottage cheese, one pkg. green onion dip mix, and butter if you want. mis till fluffy, and re-fill potatoes. Top with grated cheese and bacon bits. You can guess the amts. for larger batches.
