Have you thought of serving appetizers of minature diplomas. To make you cut the crusts off slices of bread. Flatten the bread by rooling it with a rolling pin. Thin spread some filling such as tuna salad, cream cheese spread, deviled ham, or anything else you may feel is appropriate. Roll the flatten bread slice up and then tie a thin long strip of carrot or green onion around the roll like a ribbon. These "diplomas" can be arranged on a serving platter. I have served them at graduation parties and they were a hit.
