re: low sugar jams

You will need to use a low methoxyl type pectin in order to get a gel. Regular pectin will not work. Pomona's Universal pectin is one brand. You may have to order it online. It uses a calcium water added to the low methoxyl pectin, which comes in the package. Also, you can order this type of pectin from www.barryfarm.com.
I don't have any specific recipes, though. You can use this pectin for low sugar, no sugar, fruit juice sweetened, and reg. sugar. However, the jams made without regular sugar only have a short life in the fridge once opened because sugar in regular jams helps preserve it. Normally the low or no sugar ones need to be eaten within 2 weeks. They mold quickly.
