ISO: Cart Defrisco Chicken Sandwich (updated)

okay, I lived in near Eugene for over 20 years and worked in the atrium for a few years and ate cart defrisco allot. So when I couldn't find them anymore I tried to get the recipe right. Then one of my friends worked there and gave me some of the ingredients I missed.

apple sauce, soy sauce, ginger, salt and pepper and the one thing I always got wrong is peanut butter in the brine that you soak the chicken overnight. She used to laugh because everyone was saying all these fancy peanut sauces and they just used plain old creamy peanut butter. I hope this helps with the brine. top of bun was brushed with apple sauce and sambal. I couldn't get the rest of the oil that was squirted on the cabbage. But I am sure it was something simple. I hope this helps and let me know how it turns out.

Note: Forgot one ingredient
I forgot the apple butter to sweeten it and darken it. making some tonight. will let you know how it turns out when I make it. it's only been a couple of years now. always use both colors of cabbage and home made buns. They look better and give you allot more bragging rights.
