BLACK BEAN SALAD
2 cans (16 oz. each) black beans, rinsed and drained
3 cups cooked corn kernels
2 large tomatoes, chopped
1/3 cup chopped scallions
1/3 cup chopped fresh parsley
1/3 cup olive oil
1/3 cup lemon juice
2 tsp. ground cumin
1/2 tsp. black pepper
Salt, to taste
Chopped fresh cilantro, for garnish
In a large bowl, combine all ingredients except cilantro. Refrigerate, covered, overnight.
Garnish with fresh cilantro before serving.
Serves 12
