re: masa harina

Misc.

Masa Harina is definitely not "coarse ground corn flour." It is a flour made from corn which has been limed as for hominy. The flavor and texture are different than cornmeal and I'm sure attempting to make tortillas from untreated cornmeal would be a flop. Please see Diana Kennedy's discussion of tortilla making as in "The Tortilla Book" or Patricia Quintana's "The Taste of Mexico."
Masa harina is available in Hispanic grocery stores and in many supermarkets.
I prefer the Maseca brand. Buena suerte.
