BEEF STEW WITH ALE
2 1/2 lb chuck steak, trimmed and cut in cubes
3 tbsp oil
4 large onions, chopped
2 cloves garlic, crushed
1 tbsp prepared mustard
2 tbsp flour
1 1/2 cups ale
1 tsp sugar
1 tsp salt
1/4 tsp ground nutmeg
1 bay leaf
2 sprigs parsley
1/4 tsp peppercorns
1/2 tsp thyme
Preheat oven to 350 degrees F.
Brown in a skillet in hot oil. Transfer beef to a casserole dish.
Brown onions in oil.
Add garlic, mustard, and flour. Stir in ale. Add salt, sugar, and nutmeg. Pour sauce over browned beef.
Tie the bay leaf, parsley, peppercorns, and thyme together in a cheesecloth and add to the casserole.
Cover casserole and cook in the oven for 2 hours.
