Depending on where you live, Mojo in a bottle can be found at a latino grocery store or any major grocery store in the United States. Badia makes a great mojo and sells it in 20 oz. bottles. You can order the mojo through amazon.com if you cannot find a bottle at a local grocer. You can also make it yourself, which is what Cuban housewives did years before the sauce was marketed and sold to make life easier!
Mojo criollo is our extreme garlic sauce and the very secret ingredient that makes many Cuban dishes so special. It is an absolute must for roast pork and pan con lechon sandwiches (Pork sandwiches). Unlike so many of our sofritos (sauteed onion, garlic and green pepper), mojo criollo relies on sour orange, what we call naranja agria. This is what gives it the unique citrus flavor.
This recipe will yield 1 cup, enough for making roast pork.
Mojo Criollo (Cuban Creole Marinade)
yields 1 cup
6-8 garlic cloves
1 tsp. salt
1/2 tsp. black pepper
1 tsp. dried oregano
1 tablespoon grated onion
1/2 cup sour orange juice
1/4 cup olive oil
In batches of 6 cloves, peel and mash the garlic using a mortar and pestle (or use a garlic crusher).
In a small bowl, combine the mashed garlic with onion, salt, pepper and oregano. Blend well and add olive oil, stirring together.
Stir in the 1/2 cup sour orange juice. Blend well.
If you cannot find sour oranges where you live make your own sour orange juice by mixing 2 parts lemon juice to 1 part orange juice.
