Recipe: Shrimp Salad Poor Boys
SandwichesSHRIMP SALAD POOR BOYS
1/3 cup seafood cocktail sauce
1/4 cup sour cream
2 pkg (5 to 6 oz each) frozen cooked shrimp, thawed
1/4 cup thinly sliced green onions
4 (7 to 8-inch) sub buns
1 cup shredded lettuce
1 medium tomato, thinly sliced
Combine cocktail sauce and sour cream. Stir in shrimp and green onions.
Split buns, then scoop out center of bottom half, leaving 3/4-inch shell. Fill each with 1/4 of the shrimp mixture, topping with lettuce and tomatoes and top of bun.
