Misc.Could you be thinking of Sans Rival? This is a popular confection in the Philippines, made of three very thin layers of meringue, baked on inverted cookie sheets. A cream made of butter, sugar, and egg yolks is used as a filling between the layers and on top. Chopped cashew nuts are sprinkled on top. If this sounds like the dessert you tasted, I can send you the recipe. Although I haven't made it myself - it takes more patience than I've been willing to give it - I have seen it made. And it is truly delicious.
