re: pork roast with fresh figs

Hi,

I don't have a recipe but I would do one of two things.

1) caramelize the onions and then put in quartered figs at the last minute and cook them ever so slightly. split open your poark roast so you can stuff it with carmelized onions and the figs. Reserve a few figs to make a puree then heat with pan juices and pour over cooked pork

2)roast the figs with lavender honey or something like that. then combine with carmelized onions. pour over pork roast that had been roasted with a very light garlic and herbes de provence crust.
