Recipe: Nicklows Greek Salad Dressing

This recipe was written up in the Minneapolis Tribune over 25 years ago and I recently ran across it in my stash. At the time I was told it was missing parmesan cheese, so you might want to add this to the recipe.

NICKLOW'S GREEK SALAD DRESSING

2 egg yolks (pasteurized)
1 cup oil
3 tbsp vinegar
3/4 tsp salt
1 clove garlic, crushed
3/4 tsp oregano
1 tsp lemon juice
2 tbsp boiling water

Beat egg yolks at medium high speed for 5 minutes and slowly add half the oil. Slowly add half the vinegar. Add salt, garlic, oregano and pepper to taste, beating constantly. Slowly add the remaining oil and vinegar. Add lemon juice drop by drop to mixture. Add boiling water and beat one minute.

Serves 6-8
