re: Rice noodles

No! The noodles are NOT rehydrated first. Use them right out of the package. It really is fun to watch them because the moment they hit the hot oil, they puff right up! Sai fun is the type of rice noodle. Sometimes they are labeled as rice sticks in the grocery store or asian market. If you can't find them, they can be left out. They just add a little more crunch to the salad.
Be sure to have your paper towel ready to drain them, and a skimmer or slotted spoon ready to take them out, because they cook instantaneously! I kind of crumble them into the oil. Have fun, this is a great recipe!
