Recipe: Amish Green Beans (sweet and sour, with bacon, 1984)

Side Dishes - Vegetables
AMISH GREEN BEANS

6 bacon slices
1 small onion, sliced
3 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoon dry mustard
2 cans (14 1/2 ounces each) green beans, drained; liquid saved from one can
2 tablespoons brown sugar
2 tablespoons white vinegar

Fry bacon until quite crisp; crumble. Set aside.

Retain 1 1/2 tablespoons of bacon drippings. Add the onion to drippings and saute until lightly browned.

Stir in cornstarch, salt and mustard. Stir in liquid from 1 can green beans and bring to a boil. Stir constantly.

Blend in brown sugar and vinegar; add drained green beans and heat through.

At serving time, garnish with crumbled bacon.

Makes 6 servings
