Misc. Lefse
3 cups hot mashed potatoes
1 T. sguar
1/2 cup Crisco or Lard
1 t. salt
1 1/2 cups flour (you may need a little more if your potatoes have already been mashed with milk, butter, etc.)
1 t. baking powder
Combine potatoes, sugar salt and shortening. Chill. When cold, add flour and baking powder. Mix with hands, shape into patties. Chill again.
Roll out into a thin circle, bake on ungreased hot griddle or lefse grill, turing often.
Put into 2 piles, alternating each time a new lefse is baked. Cover each pile with a tea owel as lefse is baked.
