Hello!

I'm probably too late to help you with your questions, so if you "winged it" I hope the bread turned out for you! I updated the original post to clarify some of the steps that you had questions about. I haven't made the recipe myself, but here are my recommendations:

1. The pan of water in the oven is to help with the dough in the loaf pan rise.

2. When you add the oil and amount of flour for the bread itself you won't be punching the dough down again (it will go into the loaf pan to rise).

3. After the bread dough in the pan has risen, remove the pan of water but leave the loaf pan of dough in the oven - it doesn't come out until fully baked.
