Sourdough Bread Like Cracker Barrel - Problem

I did leave the pan in the cold oven for one hour and it doubled. I then turned the oven on to 450, in this way, the top of the loaf became very dark and the underneath was not fully cooked. Since it rose in the cold oven, I did not put a pan of water in as instructed because I thought is was an either/or process.
