HOLIDAY UPSIDE DOWN PUDDING
"As it bakes, sauce goes to the bottom."
3 cups brown sugar, divided use
2 cups boiling water
6 tbsp. butter or margarine, divided use
2 cups flour
4 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 cup sour milk
1 cup chopped nuts
1 cup chopped dates
Whipped cream (for serving)
In a saucepan combine 2 cups brown sugar, 2 cups boiling water and 4 tablespoons butter. Boil for 10 minutes.
Meanwhile, to prepare the cake batter, cream together the remaining 1 cup brown sugar and remaining 2 tablespoons butter; set aside.
Sift together the flour, baking powder, baking soda and salt. Add, alternately with the sour milk to the creamed sugar mixture. Stir in the dates and nut. Spread the batter in a 9x13-inch baking pan; pour the boiling syrup over top.
Bake at 350 degrees F for 1 hour.
Serve with whipped cream.
UPSIDE-DOWN DATE PUDDING
1 cup snipped dates
1 cup boiling water
1/2 cup white granulated sugar
2 cups brown sugar, divided use
1 egg
3 tbsp. butter or margarine, melted, divided use
1 1/2 cups sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped walnuts
1 1/2 cups boiling water
Vanilla ice cream (for serving)
Combine dates; add the 1 cup boiling water. Cool.
In mixing bowl, blend white sugar, 1/2 cup brown sugar, egg and 2 tablespoons melted butter; set aside.
Sift together flour, baking soda, baking powder and salt. Add to the sugar mixture. Stir in walnuts and cooled date mixture. Pour into a (11 x 7 x 1 1/2-inch) cake pan.
Combine the remaining 1 1/2 cups brown sugar, the remaining 1 tablespoon melted butter, and the 1 1/2 cups boiling water; pour over the date mixture.
Bake in 375 degree F oven for 40 minutes.
Cut in squares; invert each on a plate. Serve warm, with vanilla ice cream.
Makes 9 to 12 servings
