Hi Ellen,

I don't know if this is a one day class or a term class. Anyway, in a class of 20, we would divide them up in groups ( in your case, about 4 or 5 groups) each group would prepare a low fat recipe. Each person in a group would have a designated job. I don't know how many ovens you have in your classrooom, but this worked for us. The instructor would go around to each group and help if needed.

You would have 4 or 5 low fat recipes and each group would make a recipe for that day of class. Afterward, they would sit down and enjoy the fruits of their labor, discuss the food and preparation. Sometimes they would even take any loftovers to the office!! It was fun to get their input.
