REC: White Chocolate Cream Cheese Frosting

Hi Kelly,
Someone else will probably come through with the Martha recipe, but I thought I would post this one from Southern Living's 1994 Annual Recipes.

White Chocolate Cream Cheese Frosting

4-oz. bar white chocolate
8-oz. pkg. cream cheese, softened
3-oz. pkg. cream cheese, softened
1/3 cup butter or margarine, softened
6 1/2 cups sifted powdered (confectioner's) sugar
1 1/2 tsp. vanilla extract

Melt chocolate in a heavy saucepan over low heat, stirring constantly. Remove from heat; cool 10 minutes, stirring occasionally. (Caution: Overheating white chocolate may cause loss of flavor and a coarse, grainy texture.)

Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add chocolate, beating constantly until blended. Gradually add powdered sugar, beating until smooth. Stir in vanilla. Yield About 5 cups, enough to frost between layers, on top and sides of a 3-layer, 9-inch cake.
