Dear Jane, what kind of sandwiches are you making?
I usually serve any or several of the following ,if the client agrees :
Vegetable , Minestrone ,or pasta type soup
Pasta salads , creamy or vinegrette dressing
cold bean or roasted corn salad
assorted chips
for dessert ,cookies or brownies , homemade of
coarse , usually something light or chocolate :0)
One lunch I did before Christmas , I made three
kinds of pita sandwiches : grilled eggplant,tomato
and boursin cheese ; grilled chicken (chopped)
lettuce,tomato and shredded mozzarella ; and
sliced turkey,boursin cheese,and tomato.
I served with it chips and Roasted red pepper
soup with garlic toasts. They scraped the bottom
of the pan of soup and ate all the sandwiches!!
