Squeezing Tofu

Thanks for the book congrats. As for squeezing the tofu:

I usually slice it 1/4 to 1/2-inch before pressing. And I'm always in such a rush that I'm lucky to let it press for 1/2 hour. My goal is minimum 1/2 hour. It depends on what you're going for. I have pressed tofu for 2 hours.

I have seen some books that say to press the entire cake overnight. I've never pressed tofu that long, though.
