Dear Seppo,
I learned that you are a chef, and that is truly exciting.
I also read your answer to squeezing tofu. Could you specify for how long you do this? I have been doing it exactly as you described for 45 minutes. Is that adequate. Kelly indicated to me (during a very brief chat experience) that you have a book that will be out in the spring. congratulations!!
