Dear Seppo,
I am the community dietitian for the Douglas Hospital in Montreal.
This hospital is psychiatric facility with an extensive outpatient network.
I am responsible for Nutrition Care of all outpatient programs, although recently I've been delegating that to some of my colleagues.
The outpatient clinic is in the process of providing me with a new kitchen.
I teach patients how to exist on very low income, and it seems that vegetarian style menus may be the answer in the long run, although it does require some investment initially. I also would like to explore those plant foods and appropriate recipes in which they might be included, which provide complete protein such as hemp seed, flaxseed, and quinoa. I have a whole bag of hemp seed in my refrigerator that has to be used up by the end of the year. It's very susceptible to oxidation.
