stuffed bread stick

I've never made stuffed bread sticks but I do make small calzones, stromboilis, etc.

I imagine for the bread stix you don't want your dough very thick .... so it might be working its way thru? Would it help if you brushed lightly with beaten egg? for pies and some tarts, that will work. Or sprinkle lightly with dry seasoned bread crumbs? Also, is your tomato sauce thin? I always try to use a thicken sauce for my calzones, etc..... either a pizza sauce, my thick spaghetti sauce, etc. I don't know if its true or not - but a friend told me that the low-moisture cheeses drip more than the regular. It's something I've never tested or checked .... merely passing on ideas ... thoughts.

I would think a little oozing would be acceptable ... maybe you're putting in too m uch filling? Hope you can work it out.
