My husband and I found this recipe for a stuffed beef filet from an Italian Cookbook by Beba... Let me know if you want the recipe. You take a whole beef filet roast and you spread it with a rosemary/garlic pesto and some prosciutto. You filet the roast, pound it a little to thin out. Spread with the filling, layer a little prosciutto in it and tie it up. One great things is to get it done ahead and just ready to cook. We brown it and cook in oven. It makes a wonderful beef wine sauce too. Everyone adores it!!! Let me know if you want the specifics.... "Go Bucks" LOL!
