I watched the video and there's no way that Grandma's Easy recipe would allow you to fold the dough over on itself, it's too loose. I also noticed they used some whole grain flour, which would make it stiffer, I think.

I have this in the oven at the moment, and it's risen slightly more, but still pretty flat -
