BAKED PARSNIP FRIES
parsnips (largest available)
vegetable cooking oil spray
salt (to taste)
barbecue sauce or fat-free mayonnaise (optional, for serving)
Preheat your oven to 400 degrees F.
Remove outer skin with a carrot peeler. Cut off the ends. Chop the parsnip in half. Now cut lengthwise into strips about 3/8 inch wide. Prepare enough that you have about 2 cups.
Place the fries into a medium mixing bowl. Spray for 1 second with vegetable oil cooking spray. Toss. Spray for 1 second again. Toss.
Bake for 30 minutes on a non-stick cookie sheet, turning every ten minutes. Salt lightly.
If desired, serve with barbecue sauce or fat-free mayonnaise for dipping.
