To Steve, re. canning guidelines

The University of Georgia is now considered the leading research place on this subject. However, the current USDA guidelines and Ball Blue book are still safe to follow. I don't know why you were not told of the changes by your fair board before entering. That seems unfair to me. I personally don't know of any different headspace allowances. I will check into the Univ. of Georgia's So Easy To Preserve. I see it online, so will look when I get a chance.
That is the thing with County Extension offices, they can and do vary. I wish it were not so, but it is. Here they have even gone to having folks call in and just get a list of publications they can get instead of having us answer questions.
