To Steve, re. canning guidelines
Misc. The University of Georgia is now considered the leading research place on this subject. However, the current USDA guidelines and Ball Blue book are still safe to follow. I don't know why you were not told of the changes by your fair board before entering. That seems unfair to me. I personally don't know of any different headspace allowances. I will check into the Univ. of Georgia's So Easy To Preserve. I see it online, so will look when I get a chance.
That is the thing with County Extension offices, they can and do vary. I wish it were not so, but it is. Here they have even gone to having folks call in and just get a list of publications they can get instead of having us answer questions.
