Head Space?
Misc. Wow! Being judged on accurate head space? Makes me wonder if that judge ever canned. I remember going through jars to find the one with the closest reccommended head space, but it is almost impossible to achieve. Once I was clerking at a fair (it will remained unnamed) and the "judge" was going to taste the low acid canned foods! She also thought it was OK to can vinergar-oil dressings! She was an excellent breads judge, though...guess you can't have everything in some of the smaller fairs.
