Uses for frozen spinach

Angie -- frozen spinach is very versatile a nutritious! I use it in omelets (with Swiss Cheese), stuffed mushrooms, in pasta sauces (alfredo or red), soups, and risotto (add it at the end). Just defrost and drain well before adding. There's also Eggs Florentine (use in place of Canadian Bacon in Eggs Benedict), Spinach Crepes (make a white sauce, add cheese of choice and a dash of nutmeg), and Spinach Soup (cook it in chicken broth, add a bit of onion, maybe a potato and whiz in the blender -- a touch of milk or cream at the end). Just in case those aren't enough ideas --- here's a great spinach casserole:

Easy Greek Spinach Squares

6 eggs
1/2 c. crumbled feta cheese
dash salt
dash nutmeg
1 10 oz. package frozen spinach, thawed and drained

Preheat oven to 350. Beat together eggs, cheese, salt and nutmeg; stir in spinach. Pour into greased 8" square baking dish and bake until knife inserted near center comes out clean (about 30-35 minutes).
