Recipe for Spinach Casserole

This recipe is from the cookbook, THREADGILL'S THE COOKBOOK
I have halved the recipe with no problem

Spinach Casserole

5 10 ounce packages frozen chopped spinach
1 pound bacon, fried very crisp
2 onions, chopped, sauteed
1 pound Swiss cheese, grated
Juice of 4 lemons
21 ounces cream of mushroom soup (undiluted)
salt and pepper to taste
1/2 pound butter
2 small cans mushroom stems and pieces, drained
cracker crumbs, if needed for consistency

Prehear ovene to 350 degrees. Cook frozen spinach as directed, drain well. fry the bacon, saute the onions and add remaining ingredients in order listed. Add cracker crumbs if needed to make a fairly stiff mixture. Bake uncoveredfor 30 minutes. makes about 16 servings.

This is a good dish to take to a pot luck and non spinach lovers will like it too.
