1. Place two chopsticks in a V pattern on a flat surface.
2. Place a 2-inch section of cucumber in between the chopsticks.
3. Hold the cucumber in place with the chopsticks, one hand steadying the sticks
with your thumb and pinky.
4. Take the knife and, using your top fingers as a guide, cut thin slices through the cucumber, making sure to stop when the blade rests against the chopsticks.
5. The chopsticks prevent the knife from cutting completely through the
cucumber, and produce an attractive fan garnish.
6. Marinate the fanned cucumbers in your favorite Italian dressing overnight.
They will keep in the refrigerator for 4-5 days.
