Wedding Reception

I too am working on a wedding dinner reception. Since this particular wedding
will be held at 11am, I decided to serve croissants filled with chicken salad,
pimento cheese, and ham salad. I purchased the "petite" croissants and pimento
cheese at Sam's Wholesale. The chicken salad and ham salad will be homemade.
Since you are serving such a large amount of people, I would suggest a buffet
of these "finger" sandwiches served with gumbo and jambalaya (Once prepared,
gumbo and jambalaya go a long way). I have some excellent recipes for both, e-
mail me if you would like them. I am not a professional, but this is my second
wedding that I am preparing, I have another one to do in April (and
unfortunately, I do not get paid!) I have some other ideas too, e-mail me if
you would like them. P.S. So far, I have completed 24 flower arrangements with
gigantic bows for the pews, 4 corsages, 6 botanieres, 5 altar arrangements, the
brides bouquet and 12 arrangements for the tables (complete w/tablecloths) at a
cost of under $100. My goal is a complete wedding for under $300. So far, I'm
going to make it! I'm also making a 3 tiered wedding cake and a 2 tiered
grooms cake. (The only thing I have "cheated" on is the bows, I do have a $400
bow making machine which makes 150 gigantic bows per hour)
