Recipe(tried): Wedding Reception Recipes
Misc.Jean, these are the recipes I am using for the wedding:
Gumbo
3 large chickens
2 large onions
1 cup chopped celery
2 1/2 cups oil
2 1/2 cups flour
2 (10oz) packages frozen chopped okra
2 1/2 tablespoons salt
1 tablespoons black pepper
1 1/2 tablespoons red pepper
3 pounds sausage (andouie is the best)sliced into bite size pieces
4 chicken bouillon cubes
parsley & green onion tops (to taste)
gumbo file (found in the spice aisle)
In very large pot, put chickens, cover with water, bring to a boil and then
cover pot and simmer 1 hour until done. Strain and save the broth to use as
your liquid in the gumbo. Debone the chicken.
Cut up the onions and celery. Make the roux in a heavy black iron skillet as
follows: heat the oil on medium heat for 3 minutes, then add the flour slowly,
stirring constantly. Cook on medium-high heat until brown (always stirring).
Turn heat to low, add onions and celery and cook until soft. Transfer roux,
onions, and celery to gumbo pot. Measure the broth, add 1 and 1/2 gallons broth
and water to make up the difference; bring to a boil. Add the okra, salt,
black pepper and red pepper, sausage and bouillon cubes. Cook 1 hour on
simmer, then skim the fat off the top. Add the deboned chicken, simmer another
30 minutes. Add some parsley and onion tops & cook 5 minutes more. Serve over
rice ( I use Uncle Ben's CONVERTED rice- this is the BEST rice for this dish!)
Add gumbo file (1/2 tsp) to each bowl as served. Makes 50 small cup servings.
Recipe can be doubled if using larger bowls.
Jambalaya
12 cups cooked CONVERTED rice
3 pounds andouie sausage (or any kind)sliced into bite size pieces
6 green peppers (chopped)
12 green onions (chopped)
3 large onions (chopped)
3 cans (small) tomato paste
1 teaspoon red pepper (or to taste)
salt & pepper to taste
Fry chopped onions in iron skillet with 6 tablespoons crisco until edges begin
to brown. Add tomato paste, chopped green peppers,chopped green onions and
sausage. Fry, stirring well all the time, for 15 minutes. Then add boiled
rice, cook on very low heat for 45 minutes, stirring every now and then.
Season to taste. Serves 25 people as a side dish.
