Wendy, I should have typed, cut orange peel into 3 pieces. Sorry for the typo. I am assuming you would leave the 2 1/2 cups water you soaked the fruit in for the jam. Otherwise there would only be the juice from the pineapple in the jam for liquid. I wish I had made this to tell you how it is, but does sound good. It does say to discard the orange peel just before putting into jars. As for the Ball Blue book, I will see what I can find. If I had your address, I could send one to you. I am not sure if that would be possible,since I know Betsy says to not give out addresses, etc.Hope this helps. Let me know how it turns out, OK?
